In a recent collaboration with Eureka 89, highly-experienced Chef Justin Wise has been appointed Consultant Executive Chef, overseeing all kitchen operations. Introducing his culinary talents to Melbourne’s skyscraper restaurant, Wise will develop evolving degustation menus as well as seasonal event menus throughout the year.

Wise works alongside an existing team of talented Chefs, including recently promoted Renee Martillano as Head Chef after two years as Sous Chef. Jeff Salt also joins the team as a consultant sommelier, pairing matched wines to accompany Wise’s impressive menu at Eureka 89.
Wise’s first menu at Eureka 89 takes a classic approach to degustation dining, including, amongst others, a beautiful Foie Gras and Sauternes dish, followed by Murray Cod with Southern Rock Lobster. Guests have the option of five or seven courses.

Due to the success of Melbourne’s highest dining experience, Eureka 89 now opens six nights of the week; Tuesday through to Sunday from 6pm.
